Since Casa Musicale was set up we’ve tried to use locally produced food only. This way of thinking is far from being obvious as Corsica imports 90% of its food supplies. However the Balagne has a strong tradition of growing its own fruits, veg and producing its own wine. Enduring farmers and gardeners can confirm that. Quite a few local products such as meat, cheese, fish, honey, herbs, vegetables from Curbara convent, oils and wines, have been part of the local history in which we strongly believe. They have been made or produced by local men and women who also believe in the region development.
With many thanks to the chefs who livened up the kitchens in the past, to the ones who will do so in the future, Corsican chefs or chefs joining us from different countries.
